Spinach Cakes

This is what cooking is about! Making your own recipes! I had some leftover ingredients and made these spinach cakes.

1 egg, beaten
2 tbsp. Butter
1 clove garlic, minced
1/4 cup Panko breadcrumbs 
9 oz. frozen chopped spinach, thawed
1/2 cup Parmesan 
1 tbsp. Parsley
1 celery stalk, chopped
1 shallot, chopped
1/2 cup Burrata

Salt + pepper to taste

1. Sautée the garlic and butter for about 2 minutes until garlic becomes soft. Add half the garlic-butter mixture to the breadcrumbs in a bowl. Stir in half the Parmesan and 1 tbsp. Parsley. Set breadcrumb mixture aside.

2. Sautee the chopped celery + shallot in the rest of the garlic butter about 3 minutes until shallots become soft. Add in your spinach and sautee for another few minutes. Season with salt + pepper to taste. (you can also add in some red pepper flakes if you like.) set aside.

3. In a bowl, combine your spinach mixture with your breadcrumb mixtures and stir. Add in 1 beaten egg and the Burrata Cheese and mix until everything is mixed together. It should look like a dip, at this point.

4. Form the dip into little balls with your hands until you have about 9 balls. Set on a baking pan with parchment paper and cook in the oven at 350 for 20-25 minutes until the cheese is slightly bubbly and the bread crumbs are browning.
